Thanks to PBFit and Chic Execs for sending ups this Peanut Butter Chocolate Powder in exchange of an honest review. All opinions are my own.

I accepted this product more so for my son. He does not eat meat, of any kind, and on top of that he is a very picky eater. So it’s always a fun time trying to plan his meals. I though this PBFit Powder would be great because I can add it to his smoothies and shakes and just give him added protein throughout the day. And to my surprise he likes it! I tried one of his banana/greek yogurt smoothies and I added two tablespoons of this powder to it. I was pleasantly surprised by the taste, and loved that it didn’t have any chalkiness to it, nor did it taste like some of these high protein recipes I have tried. Next up is making it into an actual spread and seeing if I can get him to eat it as a sandwich. Wish me luck.

Ingredients

1 cup PBfit
6 Tbsp BetterBody Foods Coconut Flour
1/3 cup BetterBody Foods Monk Fruit Sweetener
1/2 cup & 1 Tbsp canned coconut milk
2 oz unsweetened dark chocolate
1 Tbsp BetterBody Foods Monk Fruit Sweetener

Directions

1. In a medium sized mixing bowl blend together PBfit, coconut flour and monk fruit. Stir in coconut milk until the consistency of thick cookie batter. Scoop by the tablespoon, roll into balls and place on a cookie sheet lined with parchment paper. Place in refrigerator for 10 minutes.
2. Place chocolate and monk fruit in a small ramekin and microwave until melted (approx. 2 minutes).
3. Dip pb balls in melted chocolate and place on cookie sheet. Refrigerate for at least 30 minutes. Enjoy immediately or place in a freezer bag and freeze for up to a month.
